Matthis Verhaeghe's journey into the world of mixology is a testament to the power of passion and perseverance. Raised in a family deeply rooted in hospitality, Matthis was no stranger to the magic of creating unforgettable experiences for others. After completing his studies at the Hotel School in Kortrijk, Matthis found himself at a crossroads, unsure of his next steps.
However, it was during this uncertain time that Matthis's true calling revealed itself. Drawn to the dynamic energy and creativity of bartending, he embarked on a new path, driven by his love for crafting exceptional drinks and connecting with people.
"What sets us apart is that we have to want it! We have to put in the effort! Read, taste, try, and study. Knowledge is so important in our trade and you can never stop learning."
What made You het into bartending?
"My journey into bartending began with a simple desire for drinks at Bar Ran. Inspired by the artistry and passion displayed behind the bar, I found myself captivated by the craft and eager to learn more. With each visit, I became increasingly drawn to the world of mixology, eventually leading me to pursue a career as a bartender at Bar Ran. Despite initial skepticism from Ran, it was the unwavering support and belief of his wife, Janah, that propelled me into my role. At Bar Ran, I've been honing my skills and delighting patrons for the past two years, grateful for the opportunity to pursue my passion alongside such supportive mentors."
What is your favorite cocktails to drink & to make?
"My favorite cocktail to drink is without a doubt: A Manhattan! It is the perfect pairing between Whisk(e)y, vermouth and bitters and has a lot of opportunity for adaptation. There is a Manhattan for everyone! I have a guilty pleasure when it comes to making drinks: A Bloody Mary. I love to surprise the guests with different styles of spice, herbal notes and sweet&sour. Every bartender makes his Bloody Mary in their own way and by their own taste but still tries to adapt it to the flavor of our guests. This makes every Bloody Mary a tailored drink and keeps it interesting."
What makes a bartender stand out?
"I think the way you anticipate your guests, set a tone and ambiance and create that expert level of hospitality really set the greats apart. Sure, the "dranksjes" have to be great, but it's often more about adapting to specific situations. For example: if a guest is in doubt whether to take a drinks from the signature menu or a classic. You could say: "Take the signature, because that's a drink you can only drink here, but if you don't like it i'll make you that classic, on the house." "
What cocktail are you tired of making?
"Oof that's difficult. At Bar Ran we run a concept menu. So most of the drinks we make are from the menu and i don't get tired of making those. So i'd have to say: A Mojito. Especially on a Saturday night this drink can be a killer in the workflow. Finding some mint leaves, muddling lime wedges can be very tedious then. And if it's a Virgin Mojito, i'll go nuts!"
What is you favorite bar in Belgium?
"The bar that i look up to the most is Botanical By Alfonse. The way that they approach their drinks and their own style is wonderful! They are super creative and dedicated. The bar that i had the best time is Hootch. "
Who is in your opinion the best bartender in Belgium?
"I might be biast but i'd say: Ran. It's not because i work for him or consider him my family, but Ran just leads the industry by example. He is years ahead of any bartender in Belgium and is a trendsetter. The way that he approaches products, concepts and his knowledge is unparalleled. Besides Ran there are a couple of bartenders that are super skilled and incredible. Like David, from Piu Di Piu and Ruben, from Fugazi."
What inspires you to create new drinks?
"The season. Ran and i try to be as seasonal as possible with our ingredients. In spring we always go to a foraging garden to pick up fresh ingredients to work with. Other than that, i love events like whisky fairs and try to sample new and exciting products. Lastly i would say: social media and books. I try to read and watch a lot in order to stay up to date."
What is your favorite product to work with?
"Id have to say the Bar Ran Pepper&Salt: Absinthe. It highlight all ingredients and adds more intensity to a drink. My favorite spirit to work with would be: Rum."
